Hokey Pokey reminds me of my favourite summer holidays when I was little – we used have the best hokey pokey ice cream from Glebe’s Farm in Cornwall and ever since I’ve loved it!
This recipe is so easy and simple! Only 3 ingredients, a pan and a whisk are required. This recipe is Nigella’s and it gives such great results!

Ingredients:
- 100g caster sugar
- 4 tbsp. golden syrup
- 1 1/2 tsp. bicarbonate of soda
Method:
Place your golden syrup and sugar in a medium sized pan. Tip: to get your golden syrup off your spoon easily, place it in boiling water and then dry it – now it’ll be hot enough for the syrup to slide off!
Place the pan on the heat, and leave for 3-5 mins until the sugar melts and the syrup-sugar mixture turns a maple colour. It is important you don’t stir the sugar and syrup once the heat is on!!
Take your pan off the heat, add your bicarbonate of soda and whisk immediately. The honeycomb will puff up into a golden cloud, mmm.. Now tip your bubbling mixture into a tin lined with parchment paper, be careful because the honeycomb will be extremely hot!
Leave to cool and bash our set hokey pokey into bite size pieces. Enjoy 🙂

I love Hokey Pokey, but found that after I broke it up into pieces it then all stuck to each other and I ended up with huge pieces that were difficult to eat especially in company!

That’s such a shame! Perhaps you didn’t heat the sugar and syrup for long enough? Hopefully you’ll get better results if you try the recipe again! 🙂
