I absolutely LOVE the combination of white chocolate with berries – they’re two of my favourite ingredients! For this recipe I used freeze-dried strawberry pieces which I got from Lakeland – they are so little but give so much flavour, whilst not becoming over-juicy and leaking when baked! They also have the most beautiful colour which stands out against the blondie so well! 🙂

The blondie itself is quite dense and chewy, with a deep butterscotch-caramely flavour! I love anything thats sticky and sweet although these are best eaten in smaller pieces!
p.s this recipe is SOO easy – it only require one mixing bowl!! This recipe is a great for summer too!

Ingredients:
- 115g butter, melted
- 225g soft light brown Muscovado sugar
- 1 large egg, beaten
- 140g plain flour
- 1 tsp. vanilla extract
- 1 tsp. baking powder
- handful freeze-dried strawberry pieces
- 200g white chocolate
Method:
Start by preheating an oven to 170°C, then grease and flour a 20 x 20cm brownie tin.
In a large mixing bowl whisk together the melted butter and brown sugar until homogenous. Add your beaten egg and vanilla, and stir until incorporated. Next sift in the flour and baking powder and stir.
Finally add in your chopped up white chocolate (or alternatively use white chocolate buttons like I did), and your strawberry pieces, and mix 🙂
Place the blondie mix in your baking tin and bake for 25-30mins, until the edges of the blondies start to come away from the pan and are nice and golden brown!
Leave to cool in your pan and then eat! ❤
