Nut & Seed Bread with Chia Jam

I first came across this recipe when I was scrolling down on one of my favourite blog sites – My New Roots! Despite constantly baking with sugar and masses of butter, I love eating healthily as it makes me feel so good about myself (and a little guilty about all the cakes I consume!)

Among my favourite healthy bakes are energy bites and ‘healthy’ chocolate bars, as well as homemade juices and smoothies! But, this bread really has become my latest obsession!

This ‘bread’ is PACKED full of fibre, protein and vitamins. Ingredients include psyllium seed husks, a source of dietary soluble fibre which is believed to be extremely  good for your bowels, and new research has suggested the seed husks can also reduce cholesterol!

 

14059944_10206830706310992_497960695_oThis recipe does have a few obscure ingredients which you may not have in your pantry… however once you do make this bread I’m hopeful it’ll become a regular bake so sourcing the ingredients is definitely worth the while!

Ingredients: 

  • 135g sunflower seeds
  • 90g flax seeds
  • 65g hazelnuts or almonds
  • 145g rolled oats
  • 2 tbsp. chia seeds
  • 4 Tbsp. psyllium seed husks or 3 tbsp. seed husk powder
  • 1 tsp. salt
  • 1 tbsp. maple syrup or honey
  • 3 tbsp. melted coconut oil
  • 350ml water

Jam:

  • 1 large handful of strawberries
  • 1 1/s tbsp. chia seeds
  • 1 tsp. maple syrup

Method:

  1. Mix together all the dry ingredients together in a large mixing bowl.
  2. Whisk together the coconut oil, water and maple syrup and add to the dry ingredients – the dough should be wet and thick!
  3. Place your dough into a loaf tin – I greased mine with a little coconut oil!
  4. Smooth out the surface of your loaf and leave it to sit for atlas 2 hours, or even over night to make sure it holds its structure!
  5. Heat your oven to 175° and place the loaf tin in the centre of the oven. Bake for 20mins, and then remove the loaf from the tin. Place the bread back in the oven on the rack (without the loaf tin) and bake for another 30-40mins, until the bread looks golden brown and sounds hollow when you tap it! 🙂
  6. Let it cool, and then slice!
  • To make the chia jam, mash up your strawberries (I threw in a few blueberries too!) and then stir in your chia seeds and maple syrup. Cover with clingfilm and place in the fridge over night to set. YUM!

I ate my bread with my favourite Whole earth peanut butter and chia strawberry jam ❤

      Aw thank you so much! That’s super exciting! I love the course at Reading! And I also love being on a campus, which was a big factor when I was deciding between Leeds and Reading too 🙂 I decided on a gut feel for the two places, and Reading just felt more natural to me!
